It was the week that would set my determined lifestyle alterations into motion. It all started with St. Patrick's Day. We had good friends over who generously brought a beautifully brined grass fed, corned beef. I was in charge of the rest of the meal and I was so very proud of two dishes I prepared for the first time.
The first is from a Williams-Sonoma Holiday Favorites Cookbook that I have had in my library for quite some time: Smoked Salmon on Potatoes with Dill Sauce. Yum! Roasted organic new potatoes with a delicious tangy, creamy sauce not the mention the garnishes! Love it!
(This also brings me to the point of citing and writing recipes on a blog. I am not really sure how I can go about sharing recipes from cookbooks that I have here at home? I have looked it up on Google, but am still unsure and uneasy about the subject. If anyone can shed some light on the subject that would be wonderful! Thank you!) Perhaps I am just going to have to become more of a food connoisseur and formulate my own recipes? :)
Anyway, the second recipe was a dessert that turned out to be a big hit! A smooth, flavorful dessert with quality ingredients. I adapted the recipe from this one. I call my slightly modified version Coconut Vanilla Mousse. It has a more coconutty flavor due to the changed ingredients and is not pure white because of said ingredients. Here is the recipe:
